The problem with novelty is that eventually novelty wears off and you are left with whatever the novelty was hiding. If what lies beneath the sizzle is a juicy dry-aged ribeye cooked to perfection, then you are happy. If on the other hand, to continue the metaphor, what lies on the plate is a leathery piece of cheap meat then it does not matter if the presentation was jaw-droppingly innovative.
